The formula
The default makes six 12-inch pizzas with 274 g dough balls at 58% hydration. Change the pizza count, diameter or hydration and the ingredient weights update without disturbing the rest of the formula.
Percentages are measured against flour weight. The default batch is built around 1 kg of flour and makes six generous pizza bases.
